Here's a great Freezer Recipe brought to us by Shelly Howard, author of Munchkin Menus.

Hawaiian Chicken Recipe - Freezes Well

Stop Wasting Money at McDonalds! Instead, cook quick easy meals your Munchkins will Love.

6 boneless, skinless chicken breasts

2 eggs mixed with 2 cups of milk for dipping

2 cups of flour

1 can of pineapple chunks, drained

6 celery stalks, washed and cut into small chunks

2 chicken bouillon cubs in 1 cup of water

cup vinegar

3 Tbsp. soy sauce

3 Tbsp. corn starch

1 cups of sugar


Cut up chicken into 1 inch chunks.  Dip chicken in egg mixture and then into flour until well coated.  In a frying pan, melt 2 Tbsp. of butter.  Add the chicken pieces and cook until browned.  Transfer semi-cooked chicken to an electric fry pan and add the celery, green peppers, pineapple, and cup of the chicken bouillon and cook on medium heat for about 30 minutes until the veggies are tender.


In a small saucepan on the stove, mix together the remaining cup of chicken bouillon, vinegar, soy sauce, corn starch, and sugar.  Stir constantly until everything is mixed well (about 5-10 minutes).  Pour the sauce over the chicken and simmer about 10 minutes.  Serve over white rice.
